Easy pasta recipe

A well balanced diet includes fiber. By using whole wheat pasta you increase the fiber in these dishes. Fiber is essential for diabetics for blood glucose control.

Linguini with Zucchini

Serves 4-6

Ingredients

1 lb (500 g) durum semolina linguini (Optional whole wheat linguini)
2 garlic gloves, crushed
1 lb (500g) grated zucchini
4 Tbs. extra virgin olive oil
Basil leaves
Parmesan cheese (optional)

Preparation

Cook the pasta al dente (5 minutes) in boiling water. Drain and return to pan. While pasta is cooking, heat olive oil and add garlic. Cook for 1 minute. Add the zucchini and cook for about 2 minutes. Add the zucchini and the Parmesan cheese to the pasta and toss well. Add the basil leaves. Serve hot.

Fettuccine with eggplant and black olives

Serves 4

Ingredients

1 lb (500 g) durum semolina fettuccine (optional whole wheat fettuccine)
1 cup black olives
1 large eggplant cut in cubes
Olive oil
2 garlic cloves, crushed
Fresh parsley, finely chopped
Salt and pepper to taste
½ cup lemon juice

Preparation

Cook pasta in boiling water al dente (5-6 minutes). Drain and return to pan. Heat the oil in a frying pan and add the garlic. Cook for 1 minute. Add the eggplant and cook for about 6 minutes. Add olives, lemon juice and salt and pepper to the mixture. Add the sauce to the pasta and toss well. Serve hot. Sprinkle with parsley and Parmesan cheese.

Preparation of eggplant (optional)

Cut the eggplant in thick slices, sprinkle with salt and leave to stand for 30 minutes. Rinse well before using.
