Chocolate Pudding Recipe

Chocolate Pudding Recipe
Serves 4-6
Ingredients
6 oz/175 grams semisweet chocolate, at least 70% cocoa solids
1 ½ tbsp. orange juice
3 tbsp water
2 tbsp unsalted butter
2 eggs
1/8 tsp cream of tartar
3 tbsp superfine sugar
6 tbsp heavy cream
How to prepare it
Melt the chocolate with the orange juice and water in a small pan over very low heat, stirring constantly. Remove from the heat, add the butter and melt it until incorporated. Put the mixture into a bowl. Beat the egg yolks in a separate bowl and add them to the chocolate mixture.
In a clean bowl, whisk the egg whites with the cream of tartar until soft. Gradually add the sugar, 1 tablespoon at the time, beating well after each addition. Beat I tablespoon of the meringue obtained into the chocolate mixture, then add the rest.
In a separate bowl, whip the cream until soft. Add to the chocolate mixture. Spoon it into individual glass bowls or wine glasses. Cover with plastic wrap and let chill for at least 4 hours.
